Maca is a root vegetable native to the Peruvian Andes. It is highly valued for enriching the diet, offering a rich source of fiber and protein, and is very low in salt. It is also ideal for those following raw food diets. In the Junín region of Peru, maca is used in various ways: fresh with meat, roasted on hot stones, dried and boiled in milk, fermented into a traditional drink called "maca chicha," or ground into flour used in baked goods.
Maca powder is obtained from its dried roots, which have been used as both food and medicine for over two thousand years. This hardy plant thrives at altitudes above 3,500 meters above sea level in rocky, barren soil, enduring temperatures as low as -10 °C. It is the only edible plant capable of surviving in such extreme conditions. For the local population, maca is a primary source of energy. Although attempts have been made to grow maca in other climates and soils, there are concerns about whether roots grown elsewhere retain the same properties, as they often fail to develop fully.
